Just Bring a Salad

How many times have you been invited to a picnic - asked the host/hostess what you can bring and been given a simple "...why don't you bring a salad?"

Sounds simple, right? A little lettuce, tomatoes, green pepper, onion - or your basic macaroni or potato salad...how about something a little different this time? Try one of these and next time they won't just say "bring a salad" they'll be asking for "you know, that one you made for Joe's barbeque that everybody wanted the recipe for..."

A Little twist on Potato Salad:

8 potatoes, cubed
1/4 cup red wine vinegar
2 tablespoons chopped dill
2 small red onions, sliced
1/3 cup sour cream
1/3 cup mayonnaise

Put the potatoes in a large saucepan, cover them with
water, bring water to a boil, reduce heat and cook potatoes 
until tender. Drain. 
Gently toss with vinegar, dill, and onions. Cool. 

Combine the sour cream and the mayonnaise, season with
salt and plenty of ground black pepper. Gently
fold into potatoes and serve.

Serves 6

Seven Layer Salad

1 large head of crisp lettuce, cleaned and torn into small pieces, or shredded
1 (10 ounce) package frozen peas
1/2 cup chopped green bell pepper
12 slices bacon, fried and drained (or buy the "real" bacon bits at the grocery store)
1/2 cup chopped celery
2 cups mayonnaise
3 tablespoons white sugar
4 ounces shredded Cheddar cheese

Directions:

1 In a 9x13 inch pan layer the lettuce followed by the peas, green pepper, and celery. 

2 Spread the mayo over the top of the whole salad. Sprinkle sugar over mayo. Then add a layer of cheese and the bacon. Cover and chill for at least 8 to 12 hours before serving.

Spaghetti Salad

1 lb. spaghetti (cooked)
1 cup EACH any veggie, meat or cheese you like (onions, peppers, salami, pepperoni, zucchini, cucumbers, hard boiled eggs, bacon bits, carrots, ham, etc...) sliced, diced, shredded or julienned
Bottled Italian Dressing

This is a salad that can be as simple or hearty as you're in the mood for. Just put the spaghetti, and any other fixin's in a bowl - add enough dressing to coat and toss. It could be a different salad every time you make it!!

My grandma makes this one and it's light and creamy - perfect for a summer picnic -

Pistachio Salad

Ingredients:

1 (20 ounce) can crushed pineapple, drained
1 (3.4 ounce) package instant pistachio pudding mix
1 (8 ounce) container frozen whipped topping, thawed
1/2 (10.5 ounce) package miniature marshmallows

In a large bowl, combine the pineapple and dry pistachio pudding mix. Fold in thawed whipped topping and marshmallows until well mixed. Refrigerate until chilled and serve. 

Cucumber, Tomatoes and Onions

This is a favorite at my house in the summer. I'm always finding a bag of tomatoes sitting on my front porch and this is how we use them -

1 large cucumber
2 tomatoes
1 or 2 sweet onions (I like the spanish ones..)
Bottled Italian Dressing

Slice the cucumber, tomatoes and onion and toss in a bowl with the dressing (I add lots of dressing so the veggies are soaking in it.) Put in the fridge and let it marinate for an hour or so. This is great with burgers or steaks on the grill.
